Terra Firma has three tailored menu samples depending on groups size.

We can cater for groups from 20 to 600 persons. 

Intimate Gathering Menu 

$220pp (20-35 pers)

Canapés station

Served around the Fire Pit

 

Kangaroo loin seared on coals, smoked rhubarb condiment, coals sweet potatoes, Wattle seed  

Grilled King prawns, macadamia burnt lime cream

Or

Octopus, chorizo, chickpeas 

 

Main Event

Whole Beef ribeye Rack MS4 hung and slow cooked for 6h

Whole Line caught Fish hung, miso and lemongrass butter marinade, fresh aromatic herbs

Leg of lamb hung and smoked for 6h, rosemary, garlic 

 

3 Sides

Fire crispy smashed potatoes, aromatic ghee,

confit garlic 

Hung and smoked cabbage, burnt citrus dressing, fresh leaves, herbs salads, Dukkah  

Coal roasted whole pumpkin with burnt honey & balsamic and toasted seeds, feta, rocket

 

2 Sauces 

Traditional Chimichurri sauce with burnt citrus and spiced yogurt sauce

 

Dessert

6h smoked and hung pineapple basted with local honey, Coal roasted pears

Local cheese baked in cast iron served with smoked grapes and drizzle of honey

Coal roasted beetroot dip, smokey vegetables sticks
