Fire Cooking Class
28th of April - Sunshine Coast

During this 6h cooking class, you will learn all the basics skills to nail a cook up over the open fire. 

You will learn how to prep the different proteins and vegetables to cook them over the fire following different recipes. 

You will learn all the different stages of fire and how to cook qnd manage the heat during the the whole cooking process 

What do we cook ? How do we prepare ?:

Hung and slow fire roasted chicken 

Reversed seared Beef Rib Eye 

Barramundi Smoked on the wooden plank

Coals roasted pumpkin /burnt balsamic dressing/ fetta 

Cripy smashed potatoes over fire 

Smoked cabbage and Cauliflower slaw, burnt citrus dressing 

Chimichurri Sauce 

Spiced Yogurt Sauce 

Dessert

Smoked Pineapple / Dulce de leche / Cinnamon Crumble

 

THING WE ARE GOING TO DO 

- Learn out to start and cook over the open fire from stage to stage

-Learn the different methods of cooking: Smoking / Grilling / Slow roasting 

You will enjoy a lunch under the trees (or under cover in case of weather) to feast and enjoy all the delicious food we have been cooking together. 

Cooking on the open fire is all about selecting beautiful ingredients, taking the time to cook and enjoying the moment in good company, so let's do it together in our next Fire Cooking Master Class. 

This event is BYOB. Please feel free to bring your favorite beer or wine to enjoy—or to share! 

Attendees will receive additional itinerary details as the workshop date draws near.

Our spectacular sold out event returns Terra Firma Dining & Sheraton Grand Mirage Resort, Gold Coast present ‘Fire to Table’ – a dining experience without boundaries!

 

Our highly anticipated event is back for another extraordinary year! Hosted on the expansive South East Lawn of the resort, join us for an unforgettable fire to table dining experience hosted by Terra Firma Head Chef and Founder, Charly Pretet & Sheraton Gold Coast’s very own Executive Chef, Christopher Dodds.

 

This immersive dining experience will be a feast for all of the senses as we witness Chris, Charly and the Terra Firma team prepare a three-course share-style feast exclusively over an open flame.

 

This humble style of cooking aims to bring people together and embraces traditional forms of cooking that have been used for generations.

  • Ticket cost is $285 and includes a 3.5-hour premium beverage package showcasing Witches Falls Winery, Papa Salt Gin cocktails and Boxer Brewing craft beer plus a 3-course shared feast and live entertainment.

Wildwood Terra Firma Long Lunch 
18th - 19th of May 2024 - Kangaroo Valley NSW

Wildwood host Terra Firma from QLD - for the fire feast from land and sea in what is easily one of our funnest and most anticipated events of the year. 

Our aim with the Long Lunch series is to showcase some of our region's best produce in collaboration with amazing chefs from all around the world. There will be tickets available for both Sat 18th and Sun 19th May.

Terra Firma Long Lunch is a celebration of the local community and cuisine. The menu will showcase the region’s diverse range of produce, including fresh meat, seafood, and locally sourced fruits and vegetables. Guests will enjoy a multi-course meal with carefully selected wines and beers from Kangaroo Valley Fine Wines & Craft Ales.

We look forward to welcoming you to enjoy and explore our beautiful natural surrounds. Interacting with the team and checking out the impressive open fire pit installation with delicious local produce slowly roasting over the hot coals.

Brookfield Harvest

Brookfield Harvest serves up Australia’s biggest fire dining event

Australia’s biggest open flame dining event is returning to Brisbane, with the third annual Brookfield

Harvest set to serve up a feast for the senses on Saturday 8 h June.

From 12pm The Brookfield Showgrounds will transform into a food, wine, and music spectacle, with

regional produce coal roasted over an open fire and a guided wine journey under the winter sky. To

give an idea of what that looks like, last year’s food order consisted of 400 kilograms of beef, 120

chickens, 50 kilograms of kingfish, 160 grams of pumpkin, and 100 pineapples cooked over eight

firepits.

Set against a backdrop of Brookfield’s rolling pastures, 800 guests will graze through a menu

prepared by Charly Pretet of Terra Firma Dining, with Australian wines expertly matched by

sommelier Olivia Evans.

Live music will form the afternoon’s soundtrack, with Argentinian band Chucho Bruno taking the

stage over lunch, and American soul-singer Lisa Hunt and disco-funk-blues fusion Silk ‘n’ Oak

performing all the favourites. Harvest Cocktail Bar will open from 1pm.

Organiser Al Harvey is excited to be hosting an event that celebrates the essence of an Australian

lifestyle. “It’s a celebration allowing people to connect through food, wine and music. We’ve been

overwhelmed with the ongoing support and interest from not only patrons but businesses that are

keen to be involved. We want guests to sit back, relax and come with us on a food and wine journey

for the afternoon.”

At Brookfield Harvest, Charly’s passionate cooking display invites guests to immerse themselves in

the theatre of food over flames. “The beautiful thing about it is that I get to share the food with the

people,” Charly says. “It’s so rewarding to have so many people coming out around the fire pit and

chatting with us and coming after the dinner and telling us how amazing the food and the

experience were.”

The Brookfield Harvest is a major fundraiser for The Brookfield Show Society. Funds raised from the

event will be used for infrastructure improvements, maintenance, and preservation of the historic

Brookfield Showgrounds.

Returning to Bellingen after a hugely successful event in 2023, Terra Firma Dining is an immersive outdoor catering experience like no other. Cooked exclusively over an open flame, this unique fire-to-table journey is a feast for all the senses. 

 

We are all about celebrating food, where it comes from and bringing people together.
